Ingredients:

  • 2 skinless, boneless chicken breasts, cut into chunks
  • 2 andouille sausages sliced
  • 1 pound frozen shrimp (thawed)
  • 1 can diced tomatoes
  • 1 can tomato paste
  • 1 large onion, chopped
  • 1 green pepper, coarsely chopped
  • 1 red green pepper, coarsely chopped
  • 1 yellow green pepper, coarsely chopped
  • 1/2 a bunch of celery, chopped
  • 450 ml chicken broth (half a carton)
  • 1 bunch of fresh thyme, chopped
  • 1 bunch of fresh oregano, chopped
  • 1 tablespoon SLAP YA MAMA Hot Blend Cajun Seasoning
  • 1/2 to 1 tablespoon of cayenne pepper, depending on how hot you like it
  • 1 cup uncooked long grain rice

Instructions:

Put all of the ingredients except for the rice and the shrimp in the crock-pot. Mix it all up, and set it on high for four hours.

Stir it occasionally, and with an hour left add the rice. Then with about 15 minutes left, you can add the shrimp.

If you are a horrible person, you can leave the tails on the shrimp.

Not much to it other than the initial preparation, but it makes quite a bit. Scallops may be a good addition.
